Certains proc\u00e9d\u00e9s comme la cuisson ou le niveau de transformation sont \u00e0 m\u00eame de le modifier dans le bon sens (en le diminuant), comme dans le mauvais (en l\u2019augmentant). L\u2019objectif est de <b>diminuer l\u2019IG <\/b>des repas afin d\u2019impacter le moins possible la glyc\u00e9mie et de se pr\u00e9munir d\u2019\u00e9ventuels effets ind\u00e9sirables sur le long terme. <\/p>\n<p><b><i>D\u00e9couvrons les gestes \u00e0 adopter pour abaisser l\u2019IG de nos repas.<\/b><\/i><\/p>\n<\/div>\n<\/div>\n  \n<\/section>\n\n\n<section class=\"row mt-4\" id=\"block6\">\n\n<div class=\"col-sm-16\">\n<h2 class=\"font-weight-bold ml-md-5 mb-4 mt-0 text-montserrat\"><span>Diminuer l&rsquo;index glyc\u00e9mique de son repas<\/span><\/h2>\n<div class=\"text-justify ml-md-5 mb-0\">\n<p><b>1. Fibres \u00e0 volont\u00e9<\/b><br \/>\nContenues dans les v\u00e9g\u00e9taux, elles baissent l\u2019IG des aliments. Assiette bien compos\u00e9e<\/b><\/p>\n<ul>\n<li><b>50%<\/b> de <b>l\u00e9gumes<\/b> : apportent des fibres, ont un IG bas.<\/li>\n<li><b>25%<\/b> de <b>f\u00e9culents complets<\/b> : riches en fibres.<\/li>\n<li><b>25%<\/b> d\u2019aliments <b>prot\u00e9in\u00e9s<\/b> (<i>viande, poisson, \u0153ufs, l\u00e9gumineuses<\/i>) : limitent la mont\u00e9e de la glyc\u00e9mie en ralentissant la digestion.<\/li>\n<li>De <b>bonnes mati\u00e8res grasses<\/b> (<i>huile de colza et d\u2019olive, ol\u00e9agineux<\/i>) : ralentissent aussi la digestion.<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"col-sm-8\">\n<img class=\"img-responsive\" src=\"https:\/\/www.vitalco.com\/mag\/app\/uploads\/2024\/03\/food2-1.jpg\">\n<\/div>\n  \n<\/section>\n\n\n<section class=\"row mt-4\" id=\"block8\">\n\n<div class=\"col-sm-16\">\n<div class=\"text-justify ml-md-5 mb-0\">\n<p><b>3. Cuisson des f\u00e9culents bien ma\u00eetris\u00e9e<\/b><\/p>\n<ul>\n<li><b>Minimiser<\/b> les temps de cuisson (exemple : l\u2019IG des p\u00e2tes cuites al dente est plus bas).<\/li>\n<li>Pr\u00e9voir un <b>juste volume d\u2019eau de cuisson<\/b>. Les trop grands volumes augmentent l\u2019IG des aliments. <\/li>\n<li>Opter pour des <b>cuissons douces <\/b>(vapeur, eau). Timing parfait<\/b><\/p>\n<ul>\n<li>Commencer le repas par les aliments prot\u00e9in\u00e9s, l\u00e9gumes, mati\u00e8res grasses. Plus un aliment est transform\u00e9, plus son IG augmente. En cause : le <b>sucre ajout\u00e9<\/b>, la pauvret\u00e9 en fibres, l\u2019ensemble des processus de transformation subis (broyage, assemblage, cuisson \u00e0 haute temp\u00e9rature\u2026) qui le d\u00e9naturent en tous points.
